Ingredients:
2 slices of sourdough bread
1/2 ripe avocado, mashed
1/4 cucumber, thinly sliced
1/2 tomato, thinly sliced
1/4 capsicum (bell pepper), thinly sliced
Salt and pepper, to taste
Optional: lemon juice, chili flakes, or your favorite herbs/spices
Preparation
Instructions:
1.     Toast the Bread: Toast the sourdough bread slices until they are golden brown and crispy.
2.     Prepare the Avocado Spread: In a small bowl, mash the ripe avocado with a fork. Season with salt, pepper, and any other desired seasonings, such as lemon juice or chili flakes.
3.     Assemble the Sandwich: Spread the mashed avocado evenly on one side of each toasted bread slice. Layer the cucumber, tomato, and capsicum slices on one of the bread slices.
4.     Season and Close the Sandwich: Sprinkle some salt and pepper over the vegetable layer. Place the other bread slice with the avocado spread on top, avocado side down, to close the sandwich.
