Ingredients:

  • 1 cup puffed rice (murmura)

  • 1/4 cup finely chopped onions

  • 1/4 cup finely chopped tomatoes

  • 1/4 cup finely chopped cucumber


  • 1/4 cup grated carrots

  • 1/4 cup finely chopped capsicum

  • 1 green chilli, finely chopped

  • 1 tbsp finely chopped coriander leaves


  • 1 tbsp green chutney 

  • 1/2 tsp roasted cumin powder


  • Salt to taste

  • Lemon juice to taste

Preparation

  1. Instructions:

    • Finely chop all the vegetables: onions, tomatoes, cucumber, bell peppers, and coriander leaves.

    • Grate the carrots .


    • In a large mixing bowl, combine the puffed rice, chopped onions, tomatoes, cucumber, boiled potatoes, grated carrots, and capsicum.

    • Add the chopped green chili if you prefer a spicy kick.


    • Add the green chutney to the bowl. Mix well to ensure that all the puffed rice and vegetables are coated with the chutney.

    • Sprinkle the roasted cumin powder and salt to taste. Mix well again.


    • Add the chopped coriander leaves and a squeeze of lemon juice to enhance the flavor.

    • Mix everything thoroughly.

    • Bhelpuri is ready!
