Ingredients:
1 Katori chickpeas , drained and rinsed
1 cup mixed vegetables (such as cucumber, tomatoes, onion, bell peppers), diced
1/4 cup fresh coriander leaves, chopped
1 green chili, finely chopped
1/2 teaspoon cumin powder
1/2 teaspoon chaat masala
Juice of 1 lemon
1 tablespoon oil
Salt to taste
Preparation
Instructions:
Prepare Chickpeas:
Rinse the chickpeas under cold water to remove excess salt and drain well.
Mix Vegetables:
In a large mixing bowl, combine the drained chickpeas, mixed vegetables, chopped coriander, and chopped green chili.
Prepare Dressing:
In a small bowl, whisk together the lemon juice, oil, cumin powder, chaat masala , and salt to taste.
Combine Ingredients:
Pour the dressing over the chickpea and vegetable mixture in the large bowl. Toss gently until all ingredients are evenly coated with the dressing.
Chill (Optional):
Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
Serve:
Once chilled , serve the chickpea salad .
