Ingredients:

  • 1 Katori chickpeas , drained and rinsed

  • 1 cup mixed vegetables (such as cucumber, tomatoes, onion, bell peppers), diced

  • 1/4 cup fresh coriander leaves, chopped

  • 1 green chili, finely chopped

  • 1/2 teaspoon cumin powder

  • 1/2 teaspoon chaat masala

  • Juice of 1 lemon

  • 1 tablespoon oil

  • Salt to taste

Preparation

Instructions:

  1. Prepare Chickpeas:

    • Rinse the chickpeas under cold water to remove excess salt and drain well.

  2. Mix Vegetables:

    • In a large mixing bowl, combine the drained chickpeas, mixed vegetables, chopped coriander, and chopped green chili.

  3. Prepare Dressing:

    • In a small bowl, whisk together the lemon juice, oil, cumin powder, chaat masala , and salt to taste.

  4. Combine Ingredients:

    • Pour the dressing over the chickpea and vegetable mixture in the large bowl. Toss gently until all ingredients are evenly coated with the dressing.

  5. Chill (Optional):

    • Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.

  6. Serve:

    • Once chilled , serve the chickpea salad .
