  • 2 cups cooked chicken breast boiled, shredded or diced

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes

  • 1/2 cup onion, thinly sliced

  • 1/2 cup capsicum, diced

  • 1/4 cup coriander leaves , chopped

  • 1/4 cup mint leaves, chopped

  • 1 green chilli, finely chopped

  • Salt to taste

  • Black pepper to taste

  • 2 tablespoons plain yogurt

  • 1 tablespoon lemon juice


  • 1/2 teaspoon ground coriander


  • Salt to taste

  • Black pepper

Preparation

Instructions:

  1. In a large mixing bowl, combine the cooked chicken breast boiled, diced cucumber, cherry tomatoes, sliced onion, diced capsicum , chopped coriander leaves, chopped mint leaves, and chopped green chilli . Toss everything together gently.

  2. In a small bowl, whisk together the plain yogurt, lemon juice, coriander, chilli powder, and salt to make the dressing.

  3. Pour the dressing over the salad mixture and toss until all the ingredients are evenly coated with the dressing.

  4. Taste the salad and adjust the seasoning if needed with more salt and black pepper.

  5. Transfer the salad to a serving plate .

  6. Garnish the salad with additional coriander leaves and mint leaves .

  7. Serve the chicken salad .
