200g paneer , cut into cubes
1 large capsicum, cut into cubes
1 large onion, cut into cubes
1 medium carrot, thinly sliced
1 small green chili, finely chopped
1 tablespoon ginger-garlic paste
1 tablespoon oil for cooking
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Preparation
Instructions:
Prepare the vegetables and paneer:
Cut the paneer, bell pepper, onion, and carrot into cubes or slices .
Keep them aside.
Cooking:
Heat oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add ginger-garlic paste and green chili. Sauté for a minute until fragrant.
Add sliced onions and cook until they turn translucent.
Add sliced carrots and cubed capsicum. Cook for 2-3 minutes until they are slightly tender but still crisp.
Add the paneer cubes to the pan and gently mix with the vegetables.
Seasoning:
Add coriander powder, turmeric powder, red chili powder, garam masala, and salt to taste.
Mix well to coat the paneer and vegetables evenly with the spices.
Cooking further:
Cover the pan and let the paneer and vegetables cook for 5-6 minutes on low heat. Stir occasionally to prevent sticking.
If needed, sprinkle a little water to prevent drying out, but avoid adding too much water.
Garnish and serve:
Once the paneer and vegetables are cooked through and coated with the spices, remove the pan from heat.
Garnish with freshly chopped coriander leaves.
Serve hot .
