  • 100 -150 ml light coconut milk

  • 1/2 cup coconut water

  • 2-3 tablespoon stevia

  • 1 teaspoon vanilla extract

  • 1/4 cup desiccated coconut

  • 1-2 tablespoons chia seeds

  • Pinch of salt

Preparation

Instructions:


    • In a mixing bowl, combine the coconut milk, coconut water, stevia, vanilla extract, and a pinch of salt. Mix until well combined.

    • Stir in the desiccated coconut. This adds texture and enhances the coconut flavour.


    • If you want to increase the fiber content, add chia seeds. They will expand and add a slight crunch to the ice cream.


    • Place the mixture in the refrigerator for at least 2 hours to allow the flavours to meld and the chia seeds .


    • Pour the chilled mixture into an ice cream maker . This usually takes about 20-25 minutes.


    • Once churned, transfer the ice cream to a lidded container and freeze for an additional 2-3 hours, or until firm.


    • Scoop the ice cream into bowls and serve. You can garnish with a sprinkle of extra desiccated coconut .
