100 -150 ml light coconut milk
1/2 cup coconut water
2-3 tablespoon stevia
1 teaspoon vanilla extract
1/4 cup desiccated coconut
1-2 tablespoons chia seeds
Pinch of salt
Preparation
Instructions:
In a mixing bowl, combine the coconut milk, coconut water, stevia, vanilla extract, and a pinch of salt. Mix until well combined.
Stir in the desiccated coconut. This adds texture and enhances the coconut flavour.
If you want to increase the fiber content, add chia seeds. They will expand and add a slight crunch to the ice cream.
Place the mixture in the refrigerator for at least 2 hours to allow the flavours to meld and the chia seeds .
Pour the chilled mixture into an ice cream maker . This usually takes about 20-25 minutes.
Once churned, transfer the ice cream to a lidded container and freeze for an additional 2-3 hours, or until firm.
Scoop the ice cream into bowls and serve. You can garnish with a sprinkle of extra desiccated coconut .
