Ingredients:
Multigrain bread
Coleslaw mix (shredded cabbage and carrots)
Indian vegetables (such as spinach, bell peppers, cucumbers, onions, or tomatoes)
Plain yogurt (for dressing)
Spices and herbs such as cumin, coriander, mint, coriander .
Salt and Black pepper.
Preparation
Instructions:
Chop all the vegetables in thin slices .
In a bowl, mix the coleslaw with the all vegetables.
Add a dollop of plain yogurt to the mixture for dressing. You can also season it with spices and herbs for extra flavour .
Toast your multigrain bread slices until they are lightly golden and crispy.
Assemble your sandwich by placing a generous amount of the coleslaw and vegetable mixture between two slices of toasted bread.
Serve your coleslaw sandwich.
