Ingredients:
100g millet noodles
1 tablespoon oil
1 small onion, finely chopped
2 cloves garlic, minced
1 small carrot sliced
1 small capsicum, thinly sliced
1 small tomato, chopped
1/2 cup mixed vegetables such as peas, corn, and beans
1 green chili, finely chopped
Salt to taste
Black pepper to taste
Coriander leaves for garnish
Preparation
Instructions:
Cook the millet noodles once cooked, drain and set aside.
Heat oil in a large wok over medium heat.
Add the chopped onion and minced garlic to the wok . Saute until the onion turns translucent.
Add the carrot, sliced bell pepper, chopped tomato, and mixed vegetables to the wok. Stir-fry for a few minutes until the vegetables are slightly tender.
Add the ginger paste and green chili to the wok . Stir well to combine.
Sprinkle salt, and black pepper over the vegetables. Mix everything together.
Add the cooked millet noodles to the wok . Toss gently to coat the noodles with the vegetable mixture and spices.
Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well combined.
Remove the wok from the heat.
Garnish the millet noodles with fresh coriander leaves .
Serve hot !
