Ingredients:

  • 100g millet noodles

  • 1 tablespoon oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 small carrot sliced

  • 1 small capsicum, thinly sliced

  • 1 small tomato, chopped

  • 1/2 cup mixed vegetables such as peas, corn, and beans


  • 1 green chili, finely chopped


  • Salt to taste

  • Black pepper to taste

  • Coriander leaves for garnish

Preparation

Instructions:

  1. Cook the millet noodles once cooked, drain and set aside.

  2. Heat oil in a large wok over medium heat.

  3. Add the chopped onion and minced garlic to the wok . Saute until the onion turns translucent.

  4. Add the carrot, sliced bell pepper, chopped tomato, and mixed vegetables to the wok. Stir-fry for a few minutes until the vegetables are slightly tender.

  5. Add the ginger paste and green chili to the wok . Stir well to combine.

  6. Sprinkle salt, and black pepper over the vegetables. Mix everything together.

  7. Add the cooked millet noodles to the wok . Toss gently to coat the noodles with the vegetable mixture and spices.

  8. Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well combined.

  9. Remove the wok from the heat.

  10. Garnish the millet noodles with fresh coriander leaves .

  11. Serve hot !
