Ingredients:

  • 30 gms  millet

  • 2 cups mixed vegetables (carrots, peas, beans, bell peppers, etc.), chopped

  • 1 onion, finely chopped

  • 2 tomatoes, finely chopped

  • 2 green chilies, slit

  • 1-inch piece of ginger, finely chopped

  • 2-3 cloves of garlic, minced

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon garam masala

  • Salt, to taste

  • 2 tablespoons cooking oil

  • Fresh coriander, chopped, for garnish

  • Lemon wedges, for serving

Preparation

Instructions:

1.       Rinse the millet under running water and soak it for 15-20 minutes. Drain and set aside.

2.       Heat oil in a large pan or pressure cooker. Add the cumin seeds and let them splutter.

3.       Add the chopped onions and sauté until they turn golden brown.

4.       Add the chopped ginger, garlic, and green chilies. Sauté for another minute.

5.       Add the chopped tomatoes and cook until they are soft and mushy.

6.       Add the chopped vegetables, coriander powder, turmeric powder, garam masala, and salt. Mix well.

7.       Add the soaked millet and sauté for 2-3 minutes, allowing the millet to absorb the flavors.

8.       Add 2 cups of water and mix well. If using a pressure cooker, close the lid and cook for 2 whistles. If using a pan, cover and cook until the millet and vegetables are cooked and the water is absorbed, about 15-20 minutes.

9.       Once done, fluff the pulao with a fork. Garnish with chopped coriander and serve hot .
