Ingredients

Ingredients:

  • Poha : 1 cup

  • Nutrela (soya chunks): 1/2 cup

  • Mixed vegetables: 1 cup (carrots, peas, beans, capsicum)

  • Onion: 1 medium, finely chopped

  • Tomato: 1 medium, finely chopped

  • Green chilies: 2, finely chopped (adjust to taste)


  • Mustard seeds: 1 teaspoon


  • Turmeric powder: 1/2 teaspoon

  • Curry leaves: A few

  • Coriander leaves: chopped

  • Lemon juice: 1 tablespoon

  • Salt: To taste

  • Oil: 1 tablespoon


Preparation

  1. INSTRUCTIONS:

    • Rinse the poha under running water until it becomes soft. Drain and set aside.

    • Soak the Nutrela soya chunks in hot water for about 10 minutes. Squeeze out the excess water and set aside.

    • Heat oil in a pan and add mustard seeds. Once they start to splutter, add let them sizzle.

    • Add finely chopped onions and sauté until they turn golden brown.

    • Add green chilies, and curry leaves. Saute for another minute.

    • Add the mixed vegetables (carrots, peas, beans, capsicum) and saute for a few minutes. Cover and cook until the vegetables are tender.


    • Add the soaked and squeezed Nutrela soya chunks to the pan. Mix well.

    • Add turmeric powder and salt to taste. Stir everything together.


    • Add the softened poha to the pan. Mix gently to combine all the ingredients.

    • Cook for a couple of minutes until everything is well combined and heated through.


    • Add finely chopped tomatoes and cook for another 2-3 minutes.

    • Turn off the heat and add lemon juice. Mix well.

    • Garnish with chopped coriander leaves.

    • Serve hot.

    • Serve hot, garnished with extra coriander leaves if desired.
