Ingredients
Ingredients:
Poha : 1 cup
Nutrela (soya chunks): 1/2 cup
Mixed vegetables: 1 cup (carrots, peas, beans, capsicum)
Onion: 1 medium, finely chopped
Tomato: 1 medium, finely chopped
Green chilies: 2, finely chopped (adjust to taste)
Mustard seeds: 1 teaspoon
Turmeric powder: 1/2 teaspoon
Curry leaves: A few
Coriander leaves: chopped
Lemon juice: 1 tablespoon
Salt: To taste
Oil: 1 tablespoon
Preparation
INSTRUCTIONS:
Rinse the poha under running water until it becomes soft. Drain and set aside.
Soak the Nutrela soya chunks in hot water for about 10 minutes. Squeeze out the excess water and set aside.
Heat oil in a pan and add mustard seeds. Once they start to splutter, add let them sizzle.
Add finely chopped onions and sauté until they turn golden brown.
Add green chilies, and curry leaves. Saute for another minute.
Add the mixed vegetables (carrots, peas, beans, capsicum) and saute for a few minutes. Cover and cook until the vegetables are tender.
Add the soaked and squeezed Nutrela soya chunks to the pan. Mix well.
Add turmeric powder and salt to taste. Stir everything together.
Add the softened poha to the pan. Mix gently to combine all the ingredients.
Cook for a couple of minutes until everything is well combined and heated through.
Add finely chopped tomatoes and cook for another 2-3 minutes.
Turn off the heat and add lemon juice. Mix well.
Garnish with chopped coriander leaves.
Serve hot.
Serve hot, garnished with extra coriander leaves if desired.
