Ingredients:
1 cup Nutrela (soy chunks)
1 cup basmati rice
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 cup mixed vegetables (carrots, peas and green beans,)
2-3 green chilies chopped
2 tablespoons oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Preparation
Instructions:
Soak the Nutrela in hot water for 10-15 minutes. Squeeze out the excess water and set aside.
Rinse the rice thoroughly and soak it for 15-20 minutes. Drain the water.
In a pot, add 2 cups of water, a pinch of salt, and the soaked rice. Cook until the rice is 90% done. Drain and set aside.
Heat oil in a large pan or a pressure cooker.
Add cumin seeds chopped onions and saute until they turn golden brown.
Add the chopped tomatoes , green chillies and cook until they become soft and the oil starts to separate.
Add turmeric powder and mixed vegetables. Cook for a few minutes until the vegetables are slightly tender.
Add the soaked and squeezed Nutrela. Mix well.
Add the garam masala and salt to taste. Stir to combine all the ingredients.
Add the partially cooked rice and gently mix everything together.
Cover and cook on low heat for 5-10 minutes, allowing all the flavors to blend and the rice to fully cook.
Alternatively, if using a pressure cooker, close the lid and cook for one whistle on medium heat.
Once cooked, turn off the heat and let it sit for a few minutes and garnish with coriander leaves.
