About the Recipe

Ingredients:

  • 1 cup Nutrela (soy chunks)

  • 1 cup basmati rice

  • 1 medium onion, finely chopped

  • 1 medium tomato, finely chopped

  • 1 cup mixed vegetables (carrots, peas and green beans,)

  • 2-3 green chilies chopped


  • 2 tablespoons oil

  • 1 teaspoon cumin seeds


  • 1/2 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • Salt to taste

  • Fresh coriander leaves, chopped (for garnish)


Preparation

  1. Instructions:

    • Soak the Nutrela in hot water for 10-15 minutes. Squeeze out the excess water and set aside.

    • Rinse the rice thoroughly and soak it for 15-20 minutes. Drain the water.

    • In a pot, add 2 cups of water, a pinch of salt, and the soaked rice. Cook until the rice is 90% done. Drain and set aside.


    • Heat oil in a large pan or a pressure cooker.

    • Add cumin seeds chopped onions and saute until they turn golden brown.


    • Add the chopped tomatoes , green chillies and cook until they become soft and the oil starts to separate.

    • Add turmeric powder and mixed vegetables. Cook for a few minutes until the vegetables are slightly tender.

    • Add the soaked and squeezed Nutrela. Mix well.

    • Add the garam masala and salt to taste. Stir to combine all the ingredients.

    • Add the partially cooked rice and gently mix everything together.

    • Cover and cook on low heat for 5-10 minutes, allowing all the flavors to blend and the rice to fully cook.

    • Alternatively, if using a pressure cooker, close the lid and cook for one whistle on medium heat.


    • Once cooked, turn off the heat and let it sit for a few minutes and garnish with coriander leaves.
