1 cup oats
1/2 cup finely chopped mixed vegetables (like bell peppers, onions, spinach, tomatoes, carrots, beans,etc.)
1/4 cup chopped coriander leaves
1 green chilli, finely chopped
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
Salt to taste
1/2 cup water (adjust as needed for batter consistency)
Cooking oil for greasing the pan
Preparation
Instructions:
Prepare the batter:
Grind the oats into a coarse powder using a blender or food processor.
Transfer the powdered oats into a mixing bowl.
Add chopped vegetables, coriander leaves, green chili, cumin seeds, turmeric powder, and salt to the powdered oats.
Gradually add water to the mixture and whisk well until you get a thick batter consistency. Let the batter rest for 10-15 minutes.
Cooking the chilla:
Heat a non-stick pan or griddle over medium heat. Lightly grease it with oil.
Pour a ladleful of batter onto the center of the pan and spread it evenly into a circular shape using the back of the ladle.
Drizzle a few drops of oil around the edges of the chilla and let it cook for 2-3 minutes or until the bottom side turns golden brown.
Flip the chilla gently using a spatula and let the other side cook for another 2-3 minutes until golden brown and crispy.
Repeat the process with the remaining batter.
Serving:
Once cooked, transfer the oats chilla to a serving plate.
Serve hot with mint chutney.
