Ingredients

Ingredients:

·         100-150 grams paneer  cubed

·         1 ripe avocado, diced

·         1 cup cherry tomatoes, halved

·         1 cucumber, diced

·         1 bell pepper, diced

·         1/2 red onion, thinly sliced

·         1 cup mixed greens spinach and lettuce

·         1 tablespoon  oil

·         1 tablespoon lemon juice

·         Salt and pepper to taste

·         1 teaspoon roasted sesame seeds  for garnish

·         Fresh coriander or parsley, chopped for garnish

Preparation

Instructions:

·         Heat a non-stick pan and lightly grill the paneer cubes until they are golden brown on all sides.

·         Set aside to cool slightly.

·         In a large salad bowl, add the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.

·         Add the diced avocado to the salad bowl.

·         In a small bowl, whisk together the  oil, lemon juice , salt, and pepper.

·         Add the grilled paneer cubes to the salad bowl with the vegetables and avocado.

·         Drizzle the dressing over the salad and gently toss to combine all the ingredients.

·         Garnish with roasted sesame seeds for an added crunch.

·         Sprinkle with fresh coriander or parsley.
