Instructions:
Prepare the Vegetables:Â Wash and chop all the vegetables into thin slices or small pieces.
Saute the Vegetables: Heat a non-stick pan with a little oil for cooking. Add the chopped vegetables and sauté them until they are tender but still crisp. Season with salt, pepper, and a pinch of turmeric powder for flavor.
Prepare the Paneer: In a separate pan, lightly sauté the paneer cubes until they are golden brown on each side. You can sprinkle a pinch of garam masala.
Assemble the Roll:Â Warm the tortilla slightly. Place a portion of the saute vegetables and paneer in the center of the tortilla. Add some freshly chopped coriander leaves .
Roll it up:Â Fold the sides of the tortilla inward, then roll it tightly from one end to the other, enclosing the filling securely.
Grill or Toast:Â If you prefer a crispier texture, you can toast the rolled paneer wrap on a hot griddle or pan for a few minutes until it's lightly golden and crispy on the outside.
Serve:Â Cut the paneer roll into halves and serve with mint chutney.
