Multigrain bread slices

  • Paneer sliced or crumbled


  • 1 small onion, thinly sliced

  • 1 small tomato, thinly sliced

  • 1/2 cup spinach leaves, chopped

  • 1/2 cup grated carrots

  • 1/2 cup bell pepper(capsicum), thinly sliced

  • 2-3 green chilies, finely


  • Salt to taste

  • 1 tablespoon oil

  • Coriander leaves, chopped

  • Mint chutney

Preparation

Instructions:

:  Heat oil in a non-stick pan. Add chopped onions and saute until they turn translucent.

: Add the sliced bell peppers, chopped spinach, grated carrots, and green chilies to the pan. Saute for a few minutes until the vegetables are tender but still retain their crunch. Sprinkle salt to taste. Mix well.

: In a separate pan, saute the paneer slices until they are golden brown on each side.

 :Take two slices of multigrain bread. Place a layer of saute vegetables on one slice. Top it with grilled paneer slices. Add a layer of thinly sliced tomatoes and onions. Sprinkle some freshly chopped coriander leaves .

 :Place the other slice of bread on top to close the sandwich.

: Heat a sandwich maker or grill pan. Lightly brush the outer sides of the sandwich with oil . Grill the sandwich until it turns golden brown and crispy on both sides.

: Once the sandwich is grilled to perfection, remove it from the grill and cut it into halves or quarters. Serve hot with mint chutney .
