1 cup quinoa, rinsed and drained
2 cups water
1 tablespoon oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
1 green chili, finely chopped
1 cup mixed vegetables (carrots, beans, peas, bell peppers, cauliflower, etc.), finely chopped
1 tomato, chopped
1/2 teaspoon turmeric powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
Salt to taste

Preparation
Instructions:
Cook the quinoa:
In a saucepan, combine the rinsed quinoa and water . Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
Prepare the vegetables:
Heat oil in a large pan over medium heat.
Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Stir in minced garlic, grated ginger, and chopped green chili . Sauté for another minute until fragrant.
Add vegetables and spices:
Add mixed vegetables to the pan and sauté for a few minutes until they are slightly tender.
Add chopped tomatoes and cook until they soften and turn mushy.
Sprinkle turmeric powder, ground coriander, ground cumin, garam masala, and salt to taste. Mix well to combine with the vegetables.
Combine quinoa and vegetables:
Add the cooked quinoa to the pan with the vegetables. Mix everything together until well combined.
Cook for a few more minutes until heated through and the flavors are well blended.
Garnish and serve:
Garnish the quinoa pulao with fresh coriander leaves.
