For the ragi pizza base:

  • 1 cup ragi flour

  • 1/2 tablespoon whole wheat flour


  • Salt to taste

  • Water, as needed

  • Oil for greasing

For the pizza toppings:

  • 4 spoon pizza sauce

  • 1 cup mixed vegetables (such as bell peppers, onions, tomatoes, mushrooms, corn, and spinach), thinly sliced or diced


    2 spoon shredded low-fat cheese

  • 1 teaspoon oil

  • 1 teaspoon dried oregano


  • Red chili flakes

  • 2 tablespoon corn

  • Salt to taste



Preparation

Instructions:

  1. In a mixing bowl, combine ragi flour, whole wheat flour, and salt. Gradually add water while mixing until you get a smooth and slightly sticky dough. Knead the dough for a few minutes until it comes together.

  2. Divide the dough into equal portions and shape each portion into a ball. Flatten each ball into a thin round disc to form the pizza base.

  3. Heat a non-stick tawa over medium heat. Brush the tawa with a little oil.

  4. Place one pizza base on the tawa and cook for 2-3 minutes on each side until lightly browned and cooked through. Repeat with the remaining pizza bases.

  5. Once all the pizza bases are cooked, spread a thin layer of pizza sauce over each base.

  6. Top the sauce with the mixed vegetables.

  7. Sprinkle shredded low fat cheese evenly over the vegetable.

  8. Drizzle a little oil over the pizza toppings. Sprinkle dried oregano, red chili flakes corn, and salt to taste.

  9. Cover the tawa with a lid and cook the pizzas on low heat for 5-7 minutes or until the cheese is melted and bubbly.

  10. Once the cheese is melted, remove the pizzas from the tawa and transfer them to serving plates.


  11. Slice the ragi pizzas into wedges and serve hot.
