For the Rice Paper Rolls:
8 rice paper wrappers
Warm water for soaking
100 gms paneer
1 cup mixed Indian vegetables (such as cabbage, carrots, bell peppers, cucumber, sprouts)
1/4 cup chopped coriander leaves
1 green chili, finely
Salt to taste
2 tablespoons soy sauce
1 clove garlic, minced
1 teaspoon oil
Preparation
Instructions:
Prepare the filling by finely chopping the mixed vegetables. Combine them in a bowl with chopped coriander leaves, chopped green chili ,soya sauce and salt to taste. Mix well and set aside.
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds until it becomes soft and pliable.
Carefully remove the rice paper from the water and place it on a clean.
Place a spoonful of the prepared vegetable filling towards one edge of the rice paper wrapper, leaving some space on the sides. Fold the sides of the wrapper over the filling and then roll it tightly, similar to rolling a burrito. Repeat with the remaining wrappers and filling.
