Ingredients:

  • 1 cup semolina

  • 1/2 cup yogurt

  • 1/2 cup water

  • 1/2 cup mixed vegetables (grated carrots, finely chopped bell peppers,beans, onions, spinach, etc.)

  • 1 green chili, finely chopped

  • 1 tablespoon grated ginger

  • 1 teaspoon mustard seeds

  • 1 teaspoon cumin seeds

  • a little amount of baking soda

  • Salt to taste

  • 1 tablespoon oil for cooking

Preparation

Instructions:

  1. Prepare the batter:

    • In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a smooth batter without any lumps.

    • Add grated ginger, chopped green chili , and salt to taste. Mix well.

    • Let the batter rest for about 10-15 minutes to allow the semolina to absorb the moisture.

  2. Add vegetables and seasoning:

    • After the resting period, add the mixed vegetables to the batter. Mix until the vegetables are evenly distributed.

    • In a small pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

    • Pour this tempering over the batter and mix well.

  3. Cooking the appe:

    • Heat an appe pan over medium heat. Add a few drops of oil in each cavity of the pan.

    • Once the pan is hot, pour spoonfuls of batter into each cavity, filling them about 3/4 full.

    • Cover the pan with a lid and cook for 2-3 minutes on medium-low heat.

    • After a few minutes, remove the lid and check the bottom of the appe. Once it turns golden brown, flip them using a spoon or skewer.

    • Cook the other side for another 2-3 minutes until golden brown and cooked through.

  4. Serve:


    • Serve hot with mint chutney .
