About the Recipe

Ingredients
Ingredients:
1 cup semolina
1/2 cup yogurt
1/2 cup water
1/2 cup mixed vegetables (grated carrots, finely chopped bell peppers,beans, onions, spinach, etc.)
1 green chili, finely chopped
1 tablespoon grated ginger
1 teaspoon mustard seeds
1 teaspoon cumin seeds
a little amount of baking soda
Salt to taste
1 tablespoon oil for cooking
Preparation
Instructions:
Prepare the batter:
In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a smooth batter without any lumps.
Add grated ginger, chopped green chili , and salt to taste. Mix well.
Let the batter rest for about 10-15 minutes to allow the semolina to absorb the moisture.
Add vegetables and seasoning:
After the resting period, add the mixed vegetables to the batter. Mix until the vegetables are evenly distributed.
In a small pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
Pour this tempering over the batter and mix well.
Cooking the appe:
Heat an appe pan over medium heat. Add a few drops of oil in each cavity of the pan.
Once the pan is hot, pour spoonfuls of batter into each cavity, filling them about 3/4 full.
Cover the pan with a lid and cook for 2-3 minutes on medium-low heat.
After a few minutes, remove the lid and check the bottom of the appe. Once it turns golden brown, flip them using a spoon or skewer.
Cook the other side for another 2-3 minutes until golden brown and cooked through.
Serve:
Serve hot with mint chutney .
