Ingredients:

  • 1/2 cup oats

  • 1 cup water

  • 1/4 cup finely chopped onions

  • 1/4 cup finely chopped tomatoes

  • 1/4 cup finely chopped carrots

  • 1/4 cup chopped capsicum

  • 1/4 cup chopped green beans

  • 1/4 cup green peas


  • 1/2 tsp cumin seeds

  • 1 green chilli, finely chopped

  • 1/2 tsp turmeric powder

  • Salt to taste

  • 1 tbsp finely chopped coriander leaves

  • 1 tsp oil

Preparation

  1. Instructions:

    • Finely chop all the vegetables: onions, tomatoes, carrots, capsicum, and green beans.


    • Heat 1 tsp of oil in a non-stick pan or skillet over medium heat.

    • Add cumin seeds. Allow them to splutter.

    • Add the chopped green chilli and saute for a few seconds.

    • Add the chopped onions and saute until they turn translucent.

    • Add the chopped tomatoes and cook until they become soft.


    • Add the chopped carrots, capsicum, green beans, and green peas to the pan.

    • Add turmeric powder and salt to taste.

    • Mix well and cook for a few minutes until the vegetables are tender but still have a slight crunch.


    • Add 1 cup of water to the pan and bring it to a boil.

    • Add the oats and mix well.

    • Reduce the heat and let it simmer for about 5-7 minutes, stirring occasionally, until the oats are cooked and have absorbed the water.

    • If the mixture becomes too thick, you can add a little more water to adjust the consistency.


    • Once the oats and vegetables are cooked, turn off the heat.

    • Add the chopped coriander leaves and mix well.


    • Transfer the vegetable oats to a bowl.

    • Serve hot and enjoy your nutritious and filling vegetable oats.
