Ingredients:
1/2 cup oats
1 cup water
1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
1/4 cup finely chopped carrots
1/4 cup chopped capsicum
1/4 cup chopped green beans
1/4 cup green peas
1/2 tsp cumin seeds
1 green chilli, finely chopped
1/2 tsp turmeric powder
Salt to taste
1 tbsp finely chopped coriander leaves
1 tsp oil
Preparation
Instructions:
Finely chop all the vegetables: onions, tomatoes, carrots, capsicum, and green beans.
Heat 1 tsp of oil in a non-stick pan or skillet over medium heat.
Add cumin seeds. Allow them to splutter.
Add the chopped green chilli and saute for a few seconds.
Add the chopped onions and saute until they turn translucent.
Add the chopped tomatoes and cook until they become soft.
Add the chopped carrots, capsicum, green beans, and green peas to the pan.
Add turmeric powder and salt to taste.
Mix well and cook for a few minutes until the vegetables are tender but still have a slight crunch.
Add 1 cup of water to the pan and bring it to a boil.
Add the oats and mix well.
Reduce the heat and let it simmer for about 5-7 minutes, stirring occasionally, until the oats are cooked and have absorbed the water.
If the mixture becomes too thick, you can add a little more water to adjust the consistency.
Once the oats and vegetables are cooked, turn off the heat.
Add the chopped coriander leaves and mix well.
Transfer the vegetable oats to a bowl.
Serve hot and enjoy your nutritious and filling vegetable oats.
