Ingredients:
1 cup oats
2 cups water
1 tablespoon oil
1 small onion, finely chopped
2 cloves garlic, minced
1 green chili, finely chopped
1 carrot, chopped
1 small bell pepper chopped
1/2 cup green peas
1 tomato, finely chopped
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon ground cumin
1/2 teaspoon coriander
Salt to taste
Black pepper to taste
Fresh coriander leaves
Preparation
Instructions:
Cook Oats:
In a pan, bring water to a boil. Add oats and reduce the heat to low. Cook for 5-7 minutes, stirring occasionally, until the oats are cooked and the mixture thickens. Set aside.
Prepare Vegetables:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add minced garlic and chopped green chili. Sauté for a minute until fragrant.
Add finely chopped onion and sauté until translucent.
Add Vegetables:
Add finely chopped carrot, bell pepper, and green peas to the pan. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
Seasoning:
Add turmeric powder, ground cumin, coriander, salt, and freshly ground black pepper to the pan. Mix well to combine.
Combine with Oats:
Add the cooked oats to the pan with the vegetables. Stir everything together until well combined.
Serve:
Once everything is heated through, remove the vegetable oats from the pan .
Garnish with coriander leaves and serve hot .
