Vegetable oats with Indian vegetables is a nutritious and low-calorie dish that's perfect for weight loss. Oats are high in fiber and protein, while Indian vegetables add flavor and essential nutrients. Here's a simple recipe:

Ingredients:

  • 1 cup oats

  • 2 cups water

  • 1 tablespoon oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 green chili, finely chopped

  • 1 carrot, chopped

  • 1 small bell pepper chopped

  • 1/2 cup green peas

  • 1 tomato, finely chopped

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon coriander

  • Salt to taste

  • Black pepper to taste

  • Fresh coriander leaves

Preparation

Instructions:

  1. Cook Oats:

    • In a pan, bring water to a boil. Add oats and reduce the heat to low. Cook for 5-7 minutes, stirring occasionally, until the oats are cooked and the mixture thickens. Set aside.

  2. Prepare Vegetables:

    • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

    • Add minced garlic and chopped green chili. Sauté for a minute until fragrant.

    • Add finely chopped onion and sauté until translucent.

  3. Add Vegetables:

    • Add finely chopped carrot, bell pepper, and green peas to the pan. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.

  4. Seasoning:

    • Add turmeric powder, ground cumin, coriander, salt, and freshly ground black pepper to the pan. Mix well to combine.

  5. Combine with Oats:

    • Add the cooked oats to the pan with the vegetables. Stir everything together until well combined.

  6. Serve:

    • Once everything is heated through, remove the vegetable oats from the pan .

    • Garnish with coriander leaves and serve hot .
